Paleo Lemon Poppy Seed Muffins

(DF, SF, GF) 


  • 4 organic eggs

  • 1/3 cup fresh lemon juice

  • zest of one lemon (medium or large lemon)

  • 1 & 1/3 tsp + a quick 1 second squirt of SweetLeaf Stevia Vanilla Sweet Drops

  • ¼ cup coconut oil (refined and melted! NOTE: if you get unrefined coconut oil, your muffins will be notably more coconut-y)

  • 1 tsp pure vanilla extract

  • ½ tsp pure almond extract (this is very important!)

  • 2 & 1/3 cups of Paleo baking flour (I use Bob’s RedMill)

  • ¾ tsp baking soda

  • ¼ tsp salt

  • 2 tbsp organic poppy seeds


Topping: (*OPTIONAL)

  • extra lemon zest (only about 1 tbsp)

  • 2 tbsp coconut butter

  • quick 2 second squirt of SweetLeaf Stevia Vanilla Sweet Drops



  1. Preheat oven to 350 degrees. Line a 12 cup muffin pan with muffin liners. (This makes for the quickest clean up!)

  2. In a medium bowl, mix the paleo flour, baking soda and salt.

  3. In a large bowl, whisk together the eggs, lemon juice, zest, SweetLeaf Stevia Vanilla Sweet Drops, coconut oil, almond extract and vanilla extract. **NOTE: make sure you add the coconut oil last. I made the mistake of putting it in and then leaving for a few minutes to do stevia conversions and my coconut oil had solidified… I had to reheat it over the stovetop. Do this right before you mix wet and dry ingredients! J

  4. Stir the dry ingredients into the wet bowl until perfectly mixed. Add in poppy seeds now.

  5. Divide up the batter evenly amongst the 12 cups. It should fill the cup about 3/4’s of the way.

  6. Bake for 16-18 minutes.

  7. Cool the muffins for 10 minutes while you stir together the topping drizzle.

  8. Melt the coconut butter, careful to not make it too hot. Stir in lemon zest and SweetLeaf Stevia Vanilla Sweet Drops. Brush on top of the muffins to the amount of your liking. Or not at all! Equally as yummy without the drizzle if you don’t have coconut butter on hand. The drizzle will harden as the muffins cool.
